MrJoe even if it isn't a full-blown AI player team, there's definitely a fun idea to be had here. Say the map is a simplified maze or obstacle course with pitfalls and traps and the objects players are trying to collect are mobile (initially I'm thinking of motorized toy mice or something) so players have to chase them down while fighting each other for them. The resistance and knockout mechanics could still apply here and be fun.
A hilarious alternative environment for this to happen: the map is an (obviously fake) city where the animals are kaiju-sized and the objects being collected are cars. A faster or heavier vehicle (a sports car or a semi truck) could be the rare high-point item. Bonus points if the city is destructible. 😛
